Reducing Food Waste for a Sustainable Future

Why should we learn how to reduce food waste? Because it’s a simple but highly effective way to combat climate change–and save money! 

Reducing food waste is an important way we can all participate in addressing the climate crisis.  The negative impacts of household food waste includes greenhouse gas emission from landfills, as well as water pollution and deforestation from the production and disposal of wasted food.  And according to estimates from the USDA, the average American family of four loses $1,500 annually to uneaten food!

Dr. Sara Elnakib of Rutgers University will join us on Zoom to help us understand the environmental impact of food waste, and introduce us to simple strategies we can use to reduce it.  We’ll learn how to decode food expiration labels, ways to store food to prevent spoilage, and much more.   You’ll be prepared to start making changes that will benefit both the environment and your wallet!


Dr. Sara Elnakib

Sara Elnakib, PhD, MPH, RDN, is Department Chair and Associate Professor in the Department of Family & Community Health Sciences, part of Rutgers Cooperative Extension.  Dr. Elnakib works in the area of community nutrition, and researches how behavioral economics can be leveraged to reduce food waste.  She holds a PhD in Public Health Education and Promotion from Rutgers School of Public Health.
